Easy rice pudding recipe for balanced hormones and skin health

Naturopath Chloe Wilkinson knows that beauty comes from the inside, quite literally. Here, she shares her recipe for a simple rice pudding  that’s a perfect (and delicious) way to keep your skin clear and glowing this winter. 

Balancing our blood sugar levels is important for our skin health. When we eat food, our blood sugar levels increase. When we don’t eat they drop. Ideally we want to keep a harmonious level where there is no spiking or dropping.

To do this, we look for foods that are ‘slow release’. Slow release carbohydrates are digested in our small intestine and supply our body with a sustained release of energy. You may have heard of this before as the ‘glycaemic index’ of foods or low GI.

If we flip the switch and consume too many high GI foods, our blood sugar levels spike. This can cause inflammation and oxidative stress, which can show on the surface of our skin overtime.

This recipe is your got-to for blood sugar balancing. The brown basmati rice is low GI, coupled with an abundance of skin loving, antioxidant rich toppings.


  • 1/4 cup brown basmati rice
  • 1 can organic coconut milk
  • 4 tablespoons coconut yogurt (plus extra for topping)
  • 1/2 teaspoon of cinnamon

  • Pumpkin seeds
  • Figs
  • Raspberries
  • Cacao nibs
  • Crystallised ginger


  1. In a small saucepan combine coconut milk, rice and cinnamon.
  2. Bring the rice to the boil and then turn heat down to low. Simmer for approximately 30 minutes, covered. You want your rice to be soft and sticky when ready, with no liquid left in the pan.
  3. Let the rice cool slightly. Once cooled combine coconut yogurt with rice and mix until nice and creamy.
  4. Now it is time to plate up. Your toppings can vary depending on what you have in your cupboard but here I have gone for figs, pumpkin seeds, raspberries, cacao nibs and some crystallised ginger for that added sweet and tangy flavour bomb.
